When you get a gift it should give you a quest to talk to the corresponding companion.
You can only talk to companions in the home bases for them.
Merril- Alienage
Isabella- hanging man
Varric- hanging man
ander- his clinic in darktown
Aveline- the viscount stronghold
Bethany- your house
carver- your house
Those are all the ones i know of. You can talk to them if they have a symbol above them
And are in there home base
